Okra 143g

Okra also known by its nickname "ladies' fingers". has many health benefits. It is high in Vitamin C and is therefore, an antioxidant.

Okra, is unique in that although classed and used as a vegetable (it is actually a fruit due to the many seeds).

Okra it a good source of protein. Protein can be hard to get if you are following a restrictive diet.

Okra has a reputation of being slimy. The slime only appears if okra is over cooked. Add it near the end of the cooking process if adding it to meat or fish.

Better still cook it separately and serve it as a side dish. That way you won't offend anyone who has yet to convert to its taste. Some people love it, some people hate it. My advice is eat it anyway it is very good for you. A good source of fibre and protein. Contains Vitamin B, C and Vitamin K. Minerals including manganese, folic acid, magnesium. Helpful doses of phytochemicals that help to improve mental health, protect kidney and the liver and can dampen down allergic reactions that are common in the Springtime: asthma and hayfever.

Make okra chips by cooking okra for one or 2 minutes in a heated pan over a medium flame. If you use a good quality pan you won't even need any oil. Sprinkle with sea salt or pink Himalayan salt and serve immediately.

If you are diabetic, okra is a useful weapon in reducing insulin level. This can be done by adding sliced okra , raw to a bottle of water. Leave it in the fridge over night and drink the water during the following day.

Spring Onion

You might hear the spring onion referred to as scallion or green onion. The name varies but it is essentially the same thing and including in world cooking.

You can uses the whole onion, not just the white bulb at the end but also the green stalks.

They can be eaten hot or cold in salads. Carefully wash the spring onion before use. Often in haste to get these products from the field to the hands of the customer they skip on some of the washing process. So it is not unusual to find that they contain some soil and the odd bug or 2. This speed is needed as spring onions perish rapidly.

Keep buying them as they are packed with essential nutrients needed to support the immune system - vitamin A, C, B2 as well as the lesser known vitamins such as copper, phosphorus, magnesium. Spring onions or scallion if that is what you know them as, provide potassium. It is important to get your potassium intake from a range of fresh produce and not just from bananas.

To keep them for longer, wash and cut them up and freeze them and used them in cooking straight from the freezer.
To preserve them in the fridge, one trick is to wash and cut them up and store them in a glass jar. No need to buy on, just re-use an old jar rather than recycling it. Re-using items is a good habit to adopt.
