Carrots

Children believe carrots to be good for the eyes sight.

That's only part of the story.
Other fruit and vegetables especially ones brightly coloured orange, red and yellow are also good choices. It is due to the pigment or natural colours known in the scientific world as "carotenoids" that must give carrots their reputation. Carotenoids are found naturally in many plants and eating them transfers an important vitamin known as beta- carotene into human body.

When taken into the body these same vitamins are converted into Vitamin A, one of the free radical fighting vitamins that is essential for general health and supporting the bodies natural infection fighting defence mechanism. Also referred to as the immune system.

Avocado

Once considered exotic, nowadays avocados are all over the place: showing up in recipes for salads, smoothies, sandwiches and dips. When eaten in a salad or as a side dish avocados are treated as a vegetable.

Valuable source of Vitamin E, B6 and Potassium. There is some confusion that leads to concern that this delicious, nutritious produce is fattening. They do contain fat but not the kind of fat that is harmful. The fat found in avocados is monounsaturated fat and it has been suggested that eating foods ,such as avocados, that contain the right kind of fat, lowers cholesterol and may even lower the risk of heart disease and type 2 diabetes.

Enjoy avocados without the feelings of guilt usually associated with other high fat foods especially chocolate, biscuits and cake each of which contain the wrong kind of fat (saturated fat) and often lead to common health complaints especially when consumed in large quantities. If you are going to include saturated fat in your diet it is probably best to consume butter, coconut oil and palm oil because these fats are usually consumed in far smaller quantities.

This larger, smooth skinned variety is typically eaten with bread, especially hard dough bread or with bulla a round basic firm sweet cake, When eaten with bread and bulla avocados function as cheese or butter.

Okra 143g

Okra also known by its nickname "ladies' fingers". has many health benefits. It is high in Vitamin C and is therefore, an antioxidant.

Okra, is unique in that although classed and used as a vegetable (it is actually a fruit due to the many seeds).

Okra it a good source of protein. Protein can be hard to get if you are following a restrictive diet.

Okra has a reputation of being slimy. The slime only appears if okra is over cooked. Add it near the end of the cooking process if adding it to meat or fish.

Better still cook it separately and serve it as a side dish. That way you won't offend anyone who has yet to convert to its taste. Some people love it, some people hate it. My advice is eat it anyway it is very good for you. A good source of fibre and protein. Contains Vitamin B, C and Vitamin K. Minerals including manganese, folic acid, magnesium. Helpful doses of phytochemicals that help to improve mental health, protect kidney and the liver and can dampen down allergic reactions that are common in the Springtime: asthma and hayfever.

Make okra chips by cooking okra for one or 2 minutes in a heated pan over a medium flame. If you use a good quality pan you won't even need any oil. Sprinkle with sea salt or pink Himalayan salt and serve immediately.

If you are diabetic, okra is a useful weapon in reducing insulin level. This can be done by adding sliced okra , raw to a bottle of water. Leave it in the fridge over night and drink the water during the following day.

Savoy Cabbage (each)

All cabbage supports the immune system, is good for the brain, bones and the formation of healthy red blood cells.

Here come the science

When chewed, all cabbage releases a chemical in the body called isothiocyanates. This naturally occurring chemical compound is thought to stop cancers from starting and reduce inflammation such as mucus and phlegm. Eating cabbage stops blood cells from becoming mis-shaped. This happens in diseases such as sickle cell anaemia. (other good foods for easing the symptoms of similar diseases are: Brussels sprouts and kale)
