Wild Ginger 190g

This wild ginger is grown in tropical climates and is imported to the UK from places like Uganda, Rwanda and Jamaica.

It is finer, fiery and more potent than other gingers.

Use it as a food ingredient in the ways you expect.

In tropical countries, where this type of ginger is grown it is also used in an additional way. It is washed and chewed skin on! Used in this way it is said to ward off chest complaints, coughs, colds and flu like symptoms. Ginger is efficient alternative choice due to its anti-inflammatory, anti viral and anti bacterial qualities.

Ginger can be boiled and used as a tea to limit nausea. If you don't have time to do this a ginger biscuit can also do the trick!

There is a possibility that ginger may thin the blood in the same way one everyday preparation (sold over the counter in lots of retail outlets) claims to do. Both ginger and the other product contain salicylates. The salicylates found ginger is entirely natural. There are times when using chemical enhancers might not be possible. Childhood and pregnancy are examples of these times. Therefore, dealing with issues naturally should alleviate any concerns.

Ripe Plantain

Of all the flavours in the Caribbean and other tropical places the plantain is the one food that is universally adored.

Around the world plantains are boiled, roasted or most commonly fried. Find a way to add one to the BBQ and you will not be disappointed. Fried sweet plantains are eaten on the side with dishes like stew peas and rice or ackee and saltfish.

The trick to making delicious fried plantain is to know which ones to choose. It’s all about how the skin looks; choose from firmer green plantain, to one with a sturdy yellowish tone, or go for one that looks more beaten up for a sweeter taste.

Plantain can be added to your diet as a replacement for the common potato. Not only are they far more delicious they are nutritionally more superior. They contain a richer source of fibre as well as vitamin A, C and B6, magnesium and potassium.

The hot pepper, commonly known as the scotch bonnet pepper is the number one choice in most Caribbean cooking!

They do have a reputation for being HOT so if you are cooking for lightweights or very young children turn the heat down by first removing the seeds; or drop one whole into the pot for just a few minutes to add flavour without the heat. Keep a close eye on it make sure it does not burst.

Avocado

Once considered exotic, nowadays avocados are all over the place: showing up in recipes for salads, smoothies, sandwiches and dips. When eaten in a salad or as a side dish avocados are treated as a vegetable.

Valuable source of Vitamin E, B6 and Potassium. There is some confusion that leads to concern that this delicious, nutritious produce is fattening. They do contain fat but not the kind of fat that is harmful. The fat found in avocados is monounsaturated fat and it has been suggested that eating foods ,such as avocados, that contain the right kind of fat, lowers cholesterol and may even lower the risk of heart disease and type 2 diabetes.

Enjoy avocados without the feelings of guilt usually associated with other high fat foods especially chocolate, biscuits and cake each of which contain the wrong kind of fat (saturated fat) and often lead to common health complaints especially when consumed in large quantities. If you are going to include saturated fat in your diet it is probably best to consume butter, coconut oil and palm oil because these fats are usually consumed in far smaller quantities.

This larger, smooth skinned variety is typically eaten with bread, especially hard dough bread or with bulla a round basic firm sweet cake, When eaten with bread and bulla avocados function as cheese or butter.

Thyme - 50g

Thyme has many uses but is best known for being a corner stone in tropical cooking. No Caribbean household's shopping list would be complete without this item.

Fresh thyme (storks and all) is used as an ingredient to enhance the flavour of your favourite meat, fish, vegetarian or vegan dish. When teamed with hot peppers (scotch bonnet), spring onion, ginger and a good quality garlic you have the base for great Caribbean cooking.

Just add authentic seasonings such as Portland Spices and Jamaica Valley high quality pre mixed seasonings. Both are monosodium glutamate (MSG) FREE, and make food taste tropical and delicious. I will be surprised if you need to add anything else to your pot. But if you do here is some motherly advice. Add a little sprinkling of black pepper and a whole heap of LOVE.

In addition to its versatile use in cooking, thyme is said to have added benefits. If coping with chest and breathing issues use fresh thyme made into a tea using hot not boiling water.

Thyme records a high level of vitamin C and is a natural anti oxidant.

Another interesting fact about thyme, dates back thousands of years. Ancient Egyptians used thyme to embalm and preserve Pharaohs!
