Ripe Plantain

Of all the flavours in the Caribbean and other tropical places the plantain is the one food that is universally adored.

Around the world plantains are boiled, roasted or most commonly fried. Find a way to add one to the BBQ and you will not be disappointed. Fried sweet plantains are eaten on the side with dishes like stew peas and rice or ackee and saltfish.

The trick to making delicious fried plantain is to know which ones to choose. It’s all about how the skin looks; choose from firmer green plantain, to one with a sturdy yellowish tone, or go for one that looks more beaten up for a sweeter taste.

Plantain can be added to your diet as a replacement for the common potato. Not only are they far more delicious they are nutritionally more superior. They contain a richer source of fibre as well as vitamin A, C and B6, magnesium and potassium.

Coco (300g)

Coco is also known by the name taro. It belongs to the same family of tubers as dasheen and eddoes.

The main different is that this tuber is slightly longer in shape. It is a starch-like vegetable and is similar in texture to a potato and if you like you can prepare and cook it in the same way.

In parts of the Caribbean the coco is added to soup.

Provides vitamins A, C and E. magnesium, iron, zinc, phosphorous, potassium, manganese and copper. Each of these minerals contribute to good health.

Scotch Bonnet Peppers (6)

The hot pepper, commonly known as the scotch bonnet pepper is the number one choice in most Caribbean cooking!

They do have a reputation for being HOT so if you are cooking for lightweights or very young children turn the heat down by first removing the seeds; or drop one whole into the pot for just a few minutes to add flavour without the heat. Keep a close eye on it make sure it does not burst.

Valuable source of Vitamin A, Vitamin C, Calcium, Iron and Potassium
