Burro banana are unique in their appearance and their taste. When ripened their taste ranges from being a tangy lemony flavour to tasting like a sweet and juicy apple. In many tropical place the burro is known as an apple banana.

It may interest some to know that regular bananas have a PH level of 5 (making them acidic) whilst burro bananas record a PH level of between 7 and 8 (making them alkaline).

Ripe Plantain

Of all the flavours in the Caribbean and other tropical places the plantain is the one food that is universally adored.

Around the world plantains are boiled, roasted or most commonly fried. Find a way to add one to the BBQ and you will not be disappointed. Fried sweet plantains are eaten on the side with dishes like stew peas and rice or ackee and saltfish.

The trick to making delicious fried plantain is to know which ones to choose. It’s all about how the skin looks; choose from firmer green plantain, to one with a sturdy yellowish tone, or go for one that looks more beaten up for a sweeter taste.

Plantain can be added to your diet as a replacement for the common potato. Not only are they far more delicious they are nutritionally more superior. They contain a richer source of fibre as well as vitamin A, C and B6, magnesium and potassium.

Okra also known by its nickname "ladies' fingers". has many health benefits. It is high in Vitamin C and is therefore, an antioxidant.

Okra, is unique in that although classed and used as a vegetable (it is actually a fruit due to the many seeds).

Okra it a good source of protein. Protein can be hard to get if you are following a restrictive diet.

Okra has a reputation of being slimy. The slime only appears if okra is over cooked. Add it near the end of the cooking process if adding it to meat or fish.

Better still cook it separately and serve it as a side dish. That way you won't offend anyone who has yet to convert to its taste. Some people love it, some people hate it. My advice is eat it anyway it is very good for you. A good source of fibre and protein. Contains Vitamin B, C and Vitamin K. Minerals including manganese, folic acid, magnesium. Make okra chips by cooking okra for one or 2 minutes in a heated pan over a medium flame. If you use a good quality pan you won't even need any oil. Sprinkle with sea salt or pink Himalayan salt and serve immediately.

If you are diabetic, okra is a useful weapon in reducing insulin level. This can be done by adding sliced okra , raw to a bottle of water. Leave it in the fridge over night and drink the water during the following day.
