Okra also known by its nickname "ladies' fingers". has many health benefits. It is high in Vitamin C and is therefore, an antioxidant.

Okra, is unique in that although classed and used as a vegetable (it is actually a fruit due to the many seeds).

Okra it a good source of protein. Protein can be hard to get if you are following a restrictive diet.

Okra has a reputation of being slimy. The slime only appears if okra is over cooked. Add it near the end of the cooking process if adding it to meat or fish.

Better still cook it separately and serve it as a side dish. That way you won't offend anyone who has yet to convert to its taste. Some people love it, some people hate it. My advice is eat it anyway it is very good for you. A good source of fibre and protein. Contains Vitamin B, C and Vitamin K. Minerals including manganese, folic acid, magnesium. Helpful doses of phytochemicals that help to improve mental health, protect kidney and the liver and can dampen down allergic reactions that are common in the Springtime: asthma and hayfever.

Make okra chips by cooking okra for one or 2 minutes in a heated pan over a medium flame. If you use a good quality pan you won't even need any oil. Sprinkle with sea salt or pink Himalayan salt and serve immediately.

If you are diabetic, okra is a useful weapon in reducing insulin level. This can be done by adding sliced okra , raw to a bottle of water. Leave it in the fridge over night and drink the water during the following day.

Yams are a complex carbohydrate increasing blood sugar levels at a slow and steady pace just like other low glycemic index foods. Yams are a great source of energy, high in dietary fibre good for minimising constipation and controlling cholesterol levels.

Yams are a source of B6 and B1 both are known to regulate the metabolism and stop it becoming sluggish. This is one of the reasons yams are recommended for menopausal women. Vitamins A and betacarotene, powerful antioxidants known to combat free radicals can be found in yams. Minerals such as copper, potassium, iron, copper, manganese and phosphorus each play a part in keeping the body in optimum health.

Yams are available all-year-round but they are freshest when harvested in August. This harvest period marks the end of the rainy season in West Africa. In yam producing countries such Nigeria, which produces the most yam, but for domestic use not export; this important time of the year is marked with a "new yam festival". The festival acts as a symbol for abundance and the availability of fresh food in West African countries.

The yams imported into the UK tend to come from Ghana.

Once harvested fresh yams are dug up and left in the sunshine to dry out. This explains their appearance. They are then re-buried and stored in yam barns for several months. The yams we receive in the UK are re-harvested, packed into boxes and sent by boat to the UK. The further away from the month of August, the less fresh and wonderful the yams become. During the Spring and early Summer, good quality yam is hard to find.

Yams can be prepared and used in a number of ways. boiled, baked, fried or roasted. Pounded yam, fufu, is served in a cake like dough and enjoyed with sauces, stews or soups.

Warning: Do not attempt to eat yams raw. They contain natural toxins which disappear once cooked.
