Avocado

Once considered exotic, nowadays avocados are all over the place: showing up in recipes for salads, smoothies, sandwiches and dips. When eaten in a salad or as a side dish avocados are treated as a vegetable.

Okra also known by its nickname "ladies' fingers". has many health benefits. It is high in Vitamin C and is therefore, an antioxidant.

Okra, is unique in that although classed and used as a vegetable (it is actually a fruit due to the many seeds).

Okra it a good source of protein. Protein can be hard to get if you are following a restrictive diet.

Okra has a reputation of being slimy. The slime only appears if okra is over cooked. Add it near the end of the cooking process if adding it to meat or fish.

Better still cook it separately and serve it as a side dish. That way you won't offend anyone who has yet to convert to its taste. Some people love it, some people hate it. Make okra chips by cooking okra for one or 2 minutes in a heated pan over a medium flame. If you use a good quality pan you won't even need any oil. Sprinkle with sea salt or pink Himalayan salt and serve immediately.

If you are diabetic, okra is a useful weapon in reducing insulin level. This can be done by adding sliced okra , raw to a bottle of water. Leave it in the fridge over night and drink the water during the following day.
